Carrot Barfi is a delicious, flavorful sweet made by simmering grated coconut with milk powder & sugar. Carrot Barfi is commonly made for Diwali & special occasions and healthy too!

Ingredients:
1.500 gm carrot
2.500 liter boiled milk
3.2 tbsp ghee
4.100 gm sugar
5.7-8 almonds
6.1 tsp cardamom powder
Method:
1.Wash and peel all the carrots and grate them.
2.Put milk and carrots together in a pan.
3.Keep stirring on high flame till the milk boils.
4.After boiling reduce the flame.
5.Now keep stirring at intervals till the milk dries up completely from the carrots.
6.When the milk dries up, add ghee and stir well until the ghee separates from the carrots.
7.Now add sugar and stir. Stir it until the sugar water dries up.
8.Once the carrots are well dried, add cardamom powder and almond pieces.
9.Apply ghee on a plate and grease it, add the cooked carrots and spread them evenly.
10.Decorate it with the remaining almond pieces.
11.When it cools down, cut it into desired shapes.
