Gajar Ki Kanji recipe – How to make gajar ki kanji

Ingredients:

250 gm Gajar(carrots)
2 tsp salt
5 cups water
2 tsp small mustard seeds powder

Method:

  1. Peel and wash the carrots.
  2. Cut the carrots into small(1 inch long) pieces. 
  3. Boil the carrot pieces, cool and drain the water.
  4. Mix all the ingredients in a glass or ceramic jars.
  5. Cover with a lid or muslin cloth and keep the jars in the sun 3-4 days.
  6. Stir with a wooden spoon before keeping the jars back in the sun.
  7. When the kanji taste sour, it means the drink is fermented.
  8. Serve carrot kanji straightway or refrigerate.
