Rabdi is a traditional Indian dessert. Generally, we made during festivals or on special occasions. Custard Apple Rabdi or Sitaphal Rabdi is a traditional Indian dessert made with fresh custard apple.
Custard apple is a storehouse of antioxidants and nutrients and lends its own sweetness and taste to this dessert.

Ingredients:

  • 1-liter full-fat milk
  • 1 cup pulp of Sitaphal (custard apple)
  • 4 tablespoon sugar
  • 1 teaspoon cardamom powder
  • 4 – 5 chopped almonds
  • 4-5 chopped pistachios

Method:

  • For making sitaphal rabdi recipe, de-seed the custard apple and collect the pulp in a bowl and keep aside.
  • Pour the milk in a heavy bottom pan and bring it to a boil.
  • When it comes to a boil, simmer the heat.
  • Let it simmer till it is reduced to half.
  • In between occasionally keep stirring.
  • The trick to making a great Rabdi is to constantly scrape the sides of the vessels during preparation so that it doesn’t burn and gives the Rabdi consistency and texture.
  • Add sugar and cardamom powder.
  • Cook till it thickens a little bit more.
  • Remove the rabdi from heat and pour it in a bowl.
  • Let it cool completely.
  • Add custard apple’s pulp in cooled rabdi and mix well.
  • Garnish with almond and pistachio slivers.
  • Chill in the refrigerator for 3 -4 hours.
  • Serve chilled.
