Shalgam ka bharta recipe – how to make shalgam ka bharta recipe

Turnip is a very healthy root vegetable full of nutrients. Turnip is rich in calcium, potassium, sodium and magnesium, vitamin C.

Ingredients :

  • Turnips -250 gms
  • Tomatoes – 2 
  • Green Chilies -1 
  • Green Peas – 1 cup
  • Green coriander – finely chopped
  • Oil -2 to 3 tablespoon
  • Asafoetida – 1/2 pinch
  • Cumin seeds -1/2 teaspoon
  • Ginger paste -1 teaspoon
  • Lemon – 1/2
  • Turmeric powder – 1/4 teaspoon
  • Coriander powder – 1/4 teaspoon
  • Red Chili Powder -1/2 teaspoon
  • Garam masala -1/4 teaspoon
  • Sugar – 1 teaspoon
  • Salt – 1 teaspoon

Method :

  • Peel turnip and washed and dried. Chopped it into 1/2 inch piece.
  • Put cooker to heat add 2 tsp oil in it. 
  • When hot, reduce flame and half cumin seeds, half asafoetida, 1/2 tsp ginger paste, half turmeric powder, half coriander powder. 
  • Slightly roast it. 
  • Add chopped turnip, red chili powder, salt and add 1/4 cup water to it.
  •  Mix it and close the lid of the cooker. Increase the flame and cook the turnip till a single whistle. 
  • After the whistle reduces the flame. let the turnip boil on low flame for 5 minutes.
  • Make tomato, green chili, and ginger paste.
  • For masala for the bharta, Add 1 tbsp oil to the pan and let it heat. then add cumin seeds, turmeric powder, and ginger paste slightly roast spices, and add tomato paste. 
  • Keep flame medium and stir. Add coriander powder, red chili powder in the masala. 
  • Stire and roast well till oil separates. Stir and roast at regular intervals.
  • Add peas to tomato masala and cover and cook it on medium flame till peas cooked. Add 1 tsp sugar(optional). Add salt.
  • Turnip(Shalgum) is boiled well in 5 minutes. Open the lid of cook after the pressure escapes, mash well.
  • Mix it to the masala, take 1/4 tsp garam masala to add it.
  •  Add a little green coriander. Mix all ingredients well. Cover and cook it for 2 to 3 minutes. Keep the medium flame.
  • After 3 minutes bharta is ready, add 1/2 tsp lemon juice to it.
  • Mix and take it out in a bowl. mouth drooling Shalgum bharta is ready. 
  • Garnish with green Coriander. 
  • Serve it with Chapati, Parantha, naan, or rice. It is sufficient for 3 to 4 members.
