Open Potato sandwich is an excellent breakfast item. This simple and healthy recipe will surely make your regular bread butter breakfast more interesting.
In this recipe, spicy potato spread topped on wholesome wheat bread and then shallowly fried to form a crispy delight. I usually have some boiled potatoes in my fridge, since we eat a lot of potatoes and it is very handy to cook up something quick. I always refrigerate boiled potatoes with their peels on, as it protects them from getting dry. Scrumptious and satiating, the potato sandwich is the ideal snack to appease your hunger.

Ingredients:-

  •  Bread slices – 4 (any bread)
  •  Boiled potato – 1 big (boiled and mashed)
  • Green chilies – 1 finely chopped
  • Red chili powder – 1/2 Teaspoon
  • Roasted cumin powder – 1/2 Teaspoon
  • Garam Masala Powder – 1/2 Teaspoon
  • Handful Chopped coriander leaves
  • Butter or Ghee for toasting
  • Salt to taste

Method:

  • Mash the potatoes well without lumps.
  • Add finely chopped green chilies, coriander leaves, and all the spice powder.
  • Add salt to taste.
  • Taste and adjust seasonings.
  • Butter one side of the bread.
  • On the other side apply the prepared potato paste.
  • Heat a griddle, toast the buttered side first until golden brown.
  • Drizzle or apply little-melted butter or ghee on top of the potato paste and then flip it over to the other side.
  • Toast the potato side on medium heat until toasted and golden brown.
  • Open Potato Sandwich is ready to serve with sauce and green chutney.
