Makhana-Carrot Kheer

Believe it or not – we all have a sweet tooth and we are always on the hunt for ways to satiate those cravings. The nutritiously delicious Makhana- Carrot Kheer (Fox Nuts- Carrot Pudding) is the perfect solution. Carrots are rich in vitamin A, vitamin C, vitamin K, vitamin b8, pantothenic acid, folate, potassium, iron, copper, and manganese. Carrots are high in beta-carotene and fiber content as well. Makhana is a good source of protein, carbohydrates, fiber, magnesium, potassium, phosphorus, iron, and zinc. Makhana is also low in calories.

Ingredients:

  • 2 cups full-fat milk
  • 4 tablespoons Oats roasted
  • 1 tablespoon raisins
  • 1 1/2 cup grated carrots
  • 1/4 teaspoon cardamom powder
  • 1/2 cup of makhanas(fox nuts)
  • 4 tablespoons sugar
  • 2 tablespoon chopped almonds
  • 2 Tablespoon ghee

Method:

  • Roast oats without ghee or oil for about 5 minutes.
  • Add 1 tablespoon of ghee and roast makhana for about 5 minutes or until they turn golden brown.
  • Take the roasted makhana out and allow them to cool. Reserve half cup and chopped or crush the remaining roasted makhana.
  • Boil the milk in a pan. After boiling the milk add roasted oats milk and simmer it for 5 minutes.
  • Add 1 tablespoon ghee in a pan and saute grated carrot for a minute.
  • Now add oats milk and cook it for 5 minutes and keep stirring.
  • Add sugar and roasted makhana and crushed makhana.
  • Give it a quick stir and add chopped nuts.
  • Our Carrot makhana kheer is ready to serve. Serve hot.
