Fry Arbi Masala

Arbi fry masala is made by frying the arbi instead of the traditional way of boiling. Today I am going to share my mom’s recipe fry arbi masala. Normally we make arbi either dry or with gravy by boiling it.

Ingredients:

  • 250 grams arbi
  • oil for frying
  • a pinch of asafoetida
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/4 teaspoon red chili powder
  • salt to taste
  • 1/2 teaspoon carom seeds
  • 1/2 teaspoon cumin seeds
  • 1-inch ginger grated
  • 2 green chilis
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dry mango powder
 

Method:

  • Peel all the arbi and wash it and then cut long like french fries. 
  • Heat the oil in the wok and deep fry the arbi till they turn golden brown in color.
  • Remove on kitchen towel.
  • Heat one teaspoon oil in another pan and add asafoetida and add carom seeds.
  • Now add turmeric powder and fried arbi and all the masalas and mix well.
  • Cover and cook for 2-3 minutes.
  • Serve hot.
