Carrot Phirni

Phirni is a very rich and creamy rice pudding and is a popular traditional dessert in India. It is very simple to make when it is made a bit carefully otherwise one can even mess up with this simple dessert. Phirni is more versatile and is more open to the flavors like kesar phirni, carrot phirni, Badam phirni, peach phirni, strawberry phirni, apple phirni, mango phirni etc.

Ingredients :

  • Basmati Rice – 1/3 Cup
  • Carrot – 250 Gms
  • Milk – 1 Litre
  • Sugar -1/2 Cup
  • Powdered Cardamom – 1/2 Tsp
  • Roasted Cashew Nuts
  • Roasted Raisins

Method:

1. Soak the basmati rice in enough water and leave it for 30 mins.

2. After 30 mins drain all the water.

3. Transfer it to a mixer jar and ground it to a coarse powder.

4. Peel and clean the carrots and grate them.

5. To a saucepan, add milk and let it boil.

6. Once the milk boils, add the ground rice and stir.

7. Continue to stir until the milk is reduced and rice is cooked.

8. Add the grated carrot now and stir it.

9. Once the rice is completely cooked, add the sugar and stir until it melts.

10. Add cardamom powder and mix well.

11. Finally add the roast cahew nuts and roasted raisins.

12. Scrumptious Carrot Phirni is ready to be served. 18. You can serve it hot or chilled.
