Sweet pudding made with tapioca pearls or sabudana and milk. We generally make sabudana kheer during some of the fasting or vrat days. This is a popular Indian pudding that is made with tapioca pearls for religious fasting days.

Ingredients:
  • 1-liter full-fat milk
  • 1 cup Sabudana or tapioca pearl or sago
  • 1 tbsp chopped dry almond
  • 7-8 saffron strands
  • 1 teaspoon cardamom powder
  • 1 cup of sugar

Method:


  • Wash sabudana with running water and soaked in two cups of water for 2 hours.
  • Heat milk in the heavy bottom pan and bring it to boil.
  • Add soaked sabudana in boiling milk. 
  • Stir well and let it simmer on low flame for 20 minutes. 
  • Do stirring occasionally and make sure sabudana or milk is not sticking on pan’s bottom.
  • Sabudana should be transparent and soft.
  • Take ladleful of kheer and pull it back when sabudana and milk fall together with the same flow, 
  • Then add sugar, cardamom powder, saffron strands chopped almonds and continue stirring.
  • When sugar melt, kheer become thin.
  • Now simmer for 6-7 minutes.
  • Now kheer is ready to serve.
  • You can serve after cools down and do garnish with chopped almonds.
