Sabudana Vada is crisply fried patties made with sago, peanuts, and mashed potatoes. These super sago sweets are crispy from outside with a soft and light texture from inside. This is a proper authentic Maharashtrian recipe of making sabudana vadas which taste too good and is exactly the way they are served in Maharashtra.

Ingredients:

  • 1 Cup Sabudana/Sago/Tapioca
  • 1 large potato, boiled and mashed
  • 2 tablespoon peanuts, roasted and crushed
  • 1/2 Teaspoon ginger grated
  • 2 tablespoon chopped fresh coriander leaves
  • 1/2 teaspoon cumin seeds
  • 1 green chilly chopped
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 teaspoon oil

Method:

  • Firstly, in a large bowl take 1/3 cup Sabudana and soak with double amount of Sabudana for 3 hours.
  • Drain off the water and rest for 30 minutes, allowing to drain off the water completely.
  • Now take the soaked sabudana in a large bowl.
  • Add boiled and mashed potato.
  • Add chopped coriander leaves, peanut powder, ginger paste, chopped green chilly, cumin seeds, black pepper and salt to taste.
  • Mix and mash well with your hand.
  • Grease your hand and take a small portion and make a small ball.
  • Grease appe pan and put sago ball.
  • Cook till golden brown from both sides.
  • Add green chutney and tomato sauce in shots glasses.
  • And sago bites.
  • Serve hot along with masala tea.
