Crispy and tasty pooris made with buckwheat flour for fasting or vrat. Kuttu ki poori can be made plain just with the buckwheat flour or in combination with mashed potato. Kuttu ka atta can be replaced by Rajgira or Singare ka atta.

Ingredients:

  • 1/2 cup buckwheat flour
  • 1 boiled potato grated
  • Sandha namak (salt) to taste
  • 1/2 inch grated ginger
  • 1 chopped green chilly
  • A handful of freshly chopped coriander leaves
  • Water as required

Method:

  • Take buckwheat flour in a bowl.
  • Add boiled potato, salt, ginger, chopped chilly and coriander leaves and mix well.
  • Add little water and make a tight dough.
  • Divide the dough into equal small size balls.
  • Sprinkle flour over the rolling board to avoid sticking of poori and roll it in a round shape using hands.
  • Don’t make it too thin.
  • Gently slide one poori in the hot oil and deep fry till it puffs up. 
  • Fry on both sides till golden and crisp. 
  • Repeat the process with the rest of the pooris and place it on paper towels to remove oil.
  • Serve immediately with dahi aloo or other raita.
