Ingredients:

  • 250 gm baby corn
  • 2 tablespoon cornflour
  • 2 tablespoon all-purpose flour
  • salt to taste
  • 2 teaspoon ginger garlic paste
  • Oil for frying
  • 3 tablespoon oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped ginger
  • 2 green chilies
  • 2 medium-sized onion cut into big pieces and separated
  • 1 cup capsicum cut into juliennes
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon crushed black pepper
  • 1 tablespoon tomato ketchup
  • 2 tablespoon red chili sauce
  • 1 tablespoon vinegar or lemon juice
  • 1 tablespoon soy sauce
  • around 1/4 cup water
  • 1 tablespoon cornflour + 2 tablespoon water
  • 1 tablespoon honey or sugar

Method

  • Cut each baby corn into four pieces.
  • Blanch the baby corn pieces in boiling water for 30 seconds and drain them out.
  • Dust the baby corn in plain flour and cornflour and ginger garlic paste.
  • Deep fry them on high heat to make it crisp on the top.
  • Heat 2 tablespoon oil in a wok.
  • Fry the chopped ginger and garlic for 30 seconds.
  • Add the rest of the ingredients one by one except the light soya sauce.
  • Mix them and toss them on high heat for 30 seconds.
  • Add the crisp fried baby corn and toss it well with light soya sauce.
  • Serve hot and garnish with chopped spring onion.
