Eggless Butterscotch Cake

This Indian butterscotch cake is made with an eggless sponge cake base, crunchy caramel praline, and whipped fresh cream frosting. It is a quick and easy recipe for a butterscotch cake. Not just the cake, I am sharing with you how to make the Butterscotch Chips as well.

Ingredients:

For the Sponge base:

  • 1 cup all-purpose flour
  • 1 teaspoon Baking Powder
  • 1 cup Curd
  • 1 cup Sugar
  • 1/2 teaspoon Baking Soda
  • 1 teaspoon Butterscotch Essence
  • 1/2 cup Vegetable Oil

For the Butterscotch Chips:

  • 3 tablespoon Sugar
  • 1/2 teaspoon Butter
  • 2 -3 drops of butterscotch essence
  • 1/2 teaspoon yellow food color

For the Sugar syrup:

  • 3/4 cup Water
  • 1 tablespoon Sugar
  • 1/4 teaspoon Butterscotch Essence

To Cover:

1 cup Whipped Cream

Method:

  • Place the sugar in the pan and melt it on high heat.
  • Once the sugar is caramelized, add in the butter and mix well to incorporate all the butter in the sugar.
  • Add food color and essence and mix it well.
  • Remove the mixture on a greased plate and set it aside to cool.
  • Once the butterscotch sets, break it into small pieces.
  • Our butterscotch chips are ready.

For Sugar Syrup:

Mix water, essence, and sugar to make a simple sugar syrup.

For Sponge:

  • Preheat oven at 180 degrees for 10 minutes.
  • Take curd in a bowl and add baking soda and baking powder and mix it well.
  • Keep it aside for one minute and notice bubbles rising in the mixture.
  • Add sugar oil and essence and mix it well.
  • Add flour in three parts and mix well to make a smooth batter.
  • Bake in the oven at 180 degrees for 30 to 35 minutes.

To assemble the cake.

  • Slice the cake into three parts.
  • Soak the base with 5 tablespoon Sugar syrup. Apply a 1” thick layer of the whipped cream. Cover it with butterscotch chips.
  • Place the second layer of cake, soak it with the sugar syrup. Apply a 1” thick layer of the whipped cream. Cover it with butterscotch chips.
  • Place the third layer of cake, soak it with the sugar syrup. Apply a 1” thick layer of the whipped cream. Cover it with butterscotch chips.
  • Cover the entire cake with whipped cream and smoothen out the cream.
  • Add Butterscotch chips on the top and make stars on the sides with whipped cream. The cake is ready to serve!
