Soak the basmati rice in enough water and leave it for 30 mins.<\/p>\n\n\n\n<p> 2. After 30 mins drain all the water.<\/p>\n\n\n\n<p>3. Transfer it to a mixer jar and ground it to a coarse powder. <\/p>\n\n\n\n<p>4. Peel and clean the carrots and grate them. <\/p>\n\n\n\n<p>5. To a saucepan, add milk and let it boil. <\/p>\n\n\n\n<p>6. Once the milk boils, add the ground rice and stir. <\/p>\n\n\n\n<p>7. Continue to stir until the milk is reduced and rice is cooked. <\/p>\n\n\n\n<p>8. Add the grated carrot now and stir it. <\/p>\n\n\n\n<p>9. Once the rice is completely cooked, add the sugar and stir until it melts. <\/p>\n\n\n\n<p>10. Add cardamom powder and mix well.<\/p>\n\n\n\n<p> 11. Finally add the roast cahew nuts and roasted raisins. <\/p>\n\n\n\n<p>12. Scrumptious Carrot Phirni is ready to be served. 18.
