Ras Malai &#8211; Ras literally translates to &#8220;juice&#8221; and malai to &#8220;cream&#8221;. Making rasmalai at home is similar to making rasgulla. Both of these are easy but quite tricky to make them perfectly soft and juicy.<\/p>\n\n\n\n<p><strong>Three Key pointers to make soft rasmalai:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Making soft chenna or paneer <\/li>\n\n\n\n<li>Proper kneading<\/li>\n\n\n\n<li>Boiling the Rasmalai disc for the right amount of time on the right flame.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"750\" height=\"500\" src=\"https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024.jpg?resize=750%2C500&#038;ssl=1\" alt=\"\" class=\"wp-image-1625\" srcset=\"https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=1024%2C683&amp;ssl=1 1024w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=300%2C200&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=768%2C512&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=1536%2C1025&amp;ssl=1 1536w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=2048%2C1367&amp;ssl=1 2048w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=75%2C50&amp;ssl=1 75w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?resize=750%2C500&amp;ssl=1 750w, https:\/\/i0.wp.com\/www.rasoitak.com\/wp-content\/uploads\/DSC_0024-scaled.jpg?w=2250&amp;ssl=1 2250w\" sizes=\"auto, (max-width: 750px) 100vw, 750px\" \/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li> Cow Milk &#8211; 500ml for chenna<\/li>\n\n\n\n<li> Milk(full fat) \u2013 500ml for ras<\/li>\n\n\n\n<li>Sugar- 200 gms<\/li>\n\n\n\n<li>Water \u2013 1 liter<\/li>\n\n\n\n<li>Saffron\/Kesar- 4-5 strands<\/li>\n\n\n\n<li>Yellow food colour (optional) &#8211; 5-6 drops<\/li>\n\n\n\n<li> Vinegar\/Lemon Juice- 10 ml<\/li>\n\n\n\n<li>Chopped nuts- 10 gm<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"Rasmalai Recipe | \u0938\u093f\u0930\u094d\u092b \u0926\u0942\u0927 \u0914\u0930 \u091a\u0940\u0928\u0940 \u0938\u0947 \u092c\u0928\u093e\u092f\u0947 \u092c\u093e\u095b\u093e\u0930 \u091c\u0948\u0938\u0940 \u0938\u0949\u092b\u094d\u091f \u0930\u0938\u092e\u0932\u093e\u0908 | \u0918\u0930 \u092a\u0930 \u092c\u0928\u093e\u0907\u092f\u0947 \u0938\u094d\u0935\u093e\u0926\u093f\u0937\u094d\u091f \u0930\u0938\u092e\u0932\u093e\u0908\" width=\"750\" height=\"422\" src=\"https:\/\/www.youtube.com\/embed\/757VgK_EzDg?start=37&#038;feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Method:<\/h4>\n\n\n\n<p><strong>To Make Rasmalai Milk\/Rabri\/Ras<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In a heavy bottom, pan boils your milk and let it simmer for 15-20 minutes.<\/li>\n\n\n\n<li>Add 50 grams sugar and saffron and keep stirring every few minutes to prevent burning.<\/li>\n\n\n\n<li>Turn off when it gets condensed to 1\/4 of the total quantity.<\/li>\n\n\n\n<li>Now allow it to cool.<\/li>\n<\/ul>\n\n\n\n<p><strong>To Make Rasmalai:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>While Ras is getting done boil the milk in another pot for making chenna\/paneer.<\/li>\n\n\n\n<li>Allow to rest for 5 minutes and add the vinegar and keep stirring until the milk curdles completely.<\/li>\n\n\n\n<li>Strain the chenna in a thin muslin cloth.<\/li>\n\n\n\n<li>wrap up the paneer in the cloth bringing together all the edges. <\/li>\n\n\n\n<li>Put the cloth under running water, making sure the paneer is wrapped well in the cloth. <\/li>\n\n\n\n<li>Rinse it well under the running water to remove the smell of vinegar.<\/li>\n\n\n\n<li>Hang it up on a hook for 45 minutes to 1 hour for the whey to completely drain.<\/li>\n\n\n\n<li>At this step, we must have a chenna that is just moist with no dripping water and not sticky.<\/li>\n\n\n\n<li>Now rub and knead your chenna firmly on your workstation.<\/li>\n\n\n\n<li>Knead your chenna until you get smooth, grain-free, and non-sticky chenna.<\/li>\n\n\n\n<li>Divide and into equal portions and make balls and flatten them gently.<\/li>\n\n\n\n<li>Bring 150-gram sugar and 500 ml water to boil in another pan.<\/li>\n\n\n\n<li>Stir until the sugar dissolves completely.<\/li>\n\n\n\n<li>When the sugar syrup begins to boil rapidly, then add discs gently.<\/li>\n\n\n\n<li>Cook for about 9 to 10 minutes on a high flame.<\/li>\n\n\n\n<li>Turn off the stove. Remove the pot from the stove to avoid cooking further. <\/li>\n\n\n\n<li>Keep it as for the next 20 minutes to avoid them turning flat or shrinking.<\/li>\n\n\n\n<li>When done they will sink in the sugar syrup.<\/li>\n\n\n\n<li>Take off the discs into the bowl of water.<\/li>\n\n\n\n<li>Squeeze the water out and dip in a mixture of warm milk, sugar &amp; saffron.<\/li>\n\n\n\n<li>Rest them for 3 to 4 hours.<\/li>\n\n\n\n<li>Serve cold, garnished with chopped nuts.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Rasmalai Recipe, How to make soft Rasmalai Rasmalai is a bengali delicacy that is very popular among the Indian Sweet Lovers.
